  • Vitamins and minerals are found just under the skin. Hence the need to cook your previously washed rind or peel as finely as possible.
  • It’s better to steam the potatoes, since between 10 and 50% of potassium and vitamin C are lost in water when boiled.
  • To boil potatoes it’s better if they are fresh: they have more moisture and less starch. For frying or baking, however, old potatoes are more suitable, because they have more starch and are more mealy.

  • For oven preparation, it’s convenient to pierce them with a fork or knife to make them lose moisture and get a mealy texture.
  • To prevent potatoes from sticking together or to the pan when fried, dip them in ice water right after being cut. Then dry them with a paper towel or dish towel and immediately add them to preheated oil. This prevents moisture loss.
  • Place a sprig of rosemary in the frying pan in the last minute before taking them out of cooking. It will give them a different flavor.

  • Potatoes must be consumed bedore 6 hours after cooked. After this time they enter a fermentation and decomposition process.
  • When they are serverd in puree they must be consumed right away. Otherwise they may lose up to 90% of their vitamins.
  • If you exceed salt in a sauce, soup or stew it only takes one raw potato and let it cook for a few minutes to reduce the salt concentration.

It’s better to storage potatos in fesh, ventilated and dark spaces, since they germinate in the presence of light. Each “potato eye” grows another sprout.
